Tteokbokki Pizza

Tteokbokki Pizza

Pizza Dough

To make the dough, mix the flour with the milk in a large bowl, set aside.
In a separate bowl, combine the water, yeast and sugar and allow the yeast to activate.
Combine the 2 mixtures to form a dough then place in the refrigerator for around 1 hour.

To make your tteokbokki, put onion, garlic, apple and kiwifruit in a blender, along with the chilli sauce, chilli powder and honey.
Blend until combined.
Heat a large pot over a medium-high heat. Add the blended ingredients, rice cakes and fish cakes and cook for 10 minutes (it’s okay if the rice cakes become soft).

To Serve

Pre-heat the oven to 150°C. Remove the dough from the refrigerator and shape into a pizza base.
Transfer the cooked rice cakes to a deep pizza pan or tray and cover with your dough. Using a pastry brush, brush the dough with melted butter. Then add the mozzarella to the centre.
Transfer to the oven and bake for around 8 minutes, or until the cheese is melted and the crust golden. Serve while still warm.
