Tahiti Fish Salad

Method
Serves 10

Dice the fish and cover it with the lime juice in a bowl for 15 minutes. Meanwhile, dice the cucumber, grate the carrot and chop the cherry tomatoes, spring onion and coriander.

Drain and pat dry the fish then mix with the vegetables and the herbs in a bowl. Cover with the coconut milk and chill for 15 to 30 minutes.

TO SERVE

Serve in a bowl with rice on the side and a slice of lemon. Enjoy!
