Sweet Potato Noodles

with Sautéed Shitake & Enoki Mushrooms Topped with an Onsen Egg
Method
Serves 2

Bring a pot of water to the boil. Add the noodles and cook for 8 minutes, or until al dente.

When the noodles are cooking, heat a wok over medium heat. Stir fry shitake mushrooms, enoki mushrooms and onions until the mushrooms are tender.

Drain the noodles and add to the wok.

Add the soy sauce and cream. Toss quickly until all combined.

Remove the wok from the heat.

 

To Serve

Place stir fry in a serving bowl. Top with onsen egg, bread crumbs and scallions. Serve.
