Sweet Onion Parsnip Dashi

Poached Lobster, Green Apple, Purple Basil, Pickled Radish

Serves 4
DASHI

In a soup pot, cook parsnips, onion and butter together over as low as possible heat until very soft (about 2 hours).

Add water, chilli and coconut milk and bring to a simmer for 30 minutes. In a blender, blend soup until very smooth.

Add bonito and let steep for 15 minutes, then strain the soup through a small hole strainer.

Season with salt to taste.

RADISHES

In a small pot, cook radishes with vinegar, water, sugar and salt. Bring to just a simmer and turn off, letting the radishes stay in the liquid.

TO SERVE

Place 6 pieces of diced apple and 6 pieces of radish in the centre of a soup bowl.

Place in some diced lobster and garnish with the basil leaves. For a restaurant like presentation, pour the soup table-side in front of your guests.
