Add all ingredients to a mixing glass and fill with ice.

Stir for around 20 seconds and strain into a stemmed cocktail glass.

Garnish with a brandied cherry.

Chef’s Tip: this is a lighter take on the classic Rob Roy. The Amaro provides a gentle, earthy bitterness while the Peychaud offers a hint of anaise and lends the drink a subtle pink hue.
