Steamed Sea Bass with Spicy Lime Sauce

Sauce

In a blender, combine lime juice,  garlic, coriander root, fish sauce, lime juice, sugar, chicken powder, fresh coriander, red chilli and green chilli. Blend until smooth.

Boil the water in a saucepan over medium heat. Add the blended mixture to the water and cook for 3 minutes

Sea Bass

Fillet and debone the sea bass by carefully removing all the bones using a knife. Keep the fillet, head and tail and discard the rest of the fish.

Place a few pieces of lemongrass or slices of lemon on a medium size, heat-proof plate. The plate needs to be big enough to hold the fish fillet but small enough to fit inside the steamer.

Fill a saucepan or wok with warm water and place over medium heat. Place your steamer in the wok or on the rim of the pot, ensuring that the water does not touch the bottom of the steamer.

Bring the water to the boil and allow the fish to steam for 15 minutes or until cooked through.

To Serve

Pour a little of the sauce on the plate. Place the steamed sea bass fillet on top and pour over the remainder of the sauce.

Garnish the fillet with coriander, red chilli and lime. Add the fish head and tail for decoration.
