Steak Tartare with Caper Mayonnaise

and truffled potato crisps
Method
Serves 4

Dice the hanger steak into about 5mm cubes. Brunoise the cornichons and red onion. Mix together steak, cornichons, red onion and capers until the ingredients are distributed evenly. Add the parsley, lemon zest and season to taste with salt and pepper. Add a splash of brandy.

To Serve

Distribute the beef tartare evenly between four dishes. Place a whole raw egg yolk on top of each plate of tartare and serve with a small pyramid of caper mayonnaise and truffled potato crisps.


Chef’s Tips: We make our own truffled potato crisps but you can create the same effect by spraying truffle oil on store-bought crisps. The seasoning also needs to be spot on to bring out all the flavours of the dish.
