Spiced Cod Fillet

With Prawns

In a small bowl, combine water, soy sauce, caster sugar and chicken powder. Stir to combine and set aside.

Slice the codfish into 12 equal pieces and cover one side of each fillet with minced prawns. Bring the sides together and press firmly until they stick.

Heat a few inches of oil to 170°C. Deep fry the stuffed fillets until cooked, then set aside. Next, deep fry the fresh prawn heads and tails until crisp. Remove from the oil and season with salt and pepper.

Heat the soy sauce mixture in a large pan over a medium heat. Pan fry the deep-fried fillets in half of the sauce then set aside. Repeat with the green onions, using the remaining sauce, then set aside.

To plate, arrange the prawn heads and tails around a base of fried green onions. Place the codfish fillets alongside the prawns and line the steamed pak choy to the side of the cod.
