Slow Cooked Beef Short Rib

Serves 4-6
BBQ Sauce

Cook oil and sweat the onions and garlic in a large saucepan until soft. Add onion, garlic powder and smoked paprika and cook for 2 minutes. Add all the wet ingredients, bring to a boil then simmer for 30 minutes. When it is a thick consistency, season with a pinch of salt and pepper, then take off heat and cool slightly. Add to a blender and blitz until it reaches a smooth consistency.

Beef Short Rib

Take the beef ribs and place in a bowl. Rub the BBQ sauce all over the meat and leave to marinate for 2 hours in the fridge. Preheat the oven at 160°C and put the beef ribs in a large oven tray. Pour the veal stock and water over the top. Cover with foil and place in the oven for roughly 3 hours. Check meat by touching it; if the meat seems to push away from the bone, it is ready.

Bacon Mac and Cheese

Cook macaroni pasta in salted boiling water for 6 minutes. Check it is al dente, then strain and cool on a tray in the fridge. Dice smokey bacon, and fry until slightly crisp. Drain on paper towel and set aside. For the bechamel, melt the butter in a saucepan. Add the flour, stir and cook for 2 minutes and add small amounts of milk until it comes together and becomes thick. Add cheddar cheese until melted. Add a pinch of smoked paprika and season with salt and pepper.

Place the macaroni in a bowl. Add cooked bacon, then enough bechamel to coat the pasta, leaving a small amount of bechamel and cheese for the top. Preheat oven on 220°C.

To assemble, take a deep 40cm x 30cm oven tray, line with some silicon paper and spoon the macaroni mix in. Top with more bechamel, extra cheese and cover with foil. Place in oven and bake for 15 minutes. Take off foil and cook for 5 more minutes to gratinate the cheese.

To Serve

Take the beef ribs out and put on a flat tray. Coat the BBQ sauce all over the meat. Place in the oven to heat back up and bake the sauce onto the meat. Cut a square of mac and cheese and lift onto a plate. Add a spoonful of BBQ sauce and place the beef rib on the sauce.
