With Mango, Caviar and Coriander
Method

Spread scallops out like a ring on the plate.

Whisk the mango, olive oil and lemon juice together in a small bowl then drizzle over the top of the scallops.

Top with ginger, lemon caviar, chives, chilli and lime zest.

Season with salt and pepper and finish with a sprinkle of caviar.

 

To Serve

Garnish with fresh mango, coriander, croutons and shiso flowers.
