San Choy Bau
Method
Serves 3
Sauce
Mix cornstarch with a tablespoon of water to create a smooth paste.
Add the remaining sauce ingredients and stir to combine.
Filling
Heat peanut oil in a wok or large skillet over high heat. Add garlic
and ginger, give it a quick stir then add the onion. Stir-fry for 1 minute,
then add the beef and cook until brown.
To Serve
Transfer the filling to a serving bowl. On a separate plate, lay out lettuce leaves, peanuts and green onions.
Spoon some of the filling onto a lettuce leaf. Top with peanuts and green onions, and sliced chilli. Bundle it up and enjoy.
