Peking Duck Brioche

Method

Serves 1

Toast the brioche bread in the oven until golden brown.
Butter the toasted brioche. Place pineapple on the buttered brioche.
Place the Peking duck meat on top of the pineapple.
Add a touch of red pinot balsamic reduction on top of the duck meat
and sprinkle the dish with toasted shallot chips.
