Pan Fried Sea Bass

With Mashed Potato and Pesto Sauce

Serves 2
Potatoes

Drop potatoes into a pot of boiling water with a pinch of salt. Boil until soft.

Mash the potatoes with a fork, keeping the skin on. Add the vinegar and butter. Mix well and add salt and pepper to taste.

 

Pesto

In a blender, add the parmesan cheese, basil, garlic and extra-virgin olive oil. Blend until smooth.

 

Sea Bass

Heat olive oil in a pan over medium-high heat. Season the sea bass with salt and pepper on both sides. Place carefully in the pan with the skin-side down. When the skin starts to get crispy, turn the fillet over and cook for another 4–5 minutes, depending on the thickness of the fish.

 

To Serve

Spoon the mashed potatoes onto the centre of the plate. Place the fish on top and garnish with the pesto sauce and a simple green salad.
