Reduce Feral Karma Citra Black IPA on low heat to 200mL and add sugar to dissolve. Toast almonds in the oven for 20 minutes at 100°C. Remove from the oven and blitz in a food processor. Add all ingredients into a vacuum bag and sous vide for 2 hours at 55°C. Strain reduction for almond pieces.
Add all ingredients into a cocktail shaker. Shake without egg to emulsify. Add ice and shake hard to combine ingredients. Strain into a cocktail glass and garnish with ground nutmeg and bacon.
