Lemon Chicken

with Green Pea Mash, Roast Tomatoes & Asparagus
Method
Serves 2

Preheat oven to 170°C.

Glaze

Mix all ingredients in a bowl.

Chicken

Coat the chicken in the marinade.

Line a tray with baking paper. Place the chicken and tomato halves on the tray and bake for 15-20 minutes or until the chicken is cooked through.

Pea Mash

While the chicken and tomatoes are cooking prepare the pea mash.

Blanch peas in boiling water for 5 minutes or until cooked.

Drain and discard the water from the peas. Add salt, pepper, mint and olive oil. Mash all ingredient to a smooth consistency.

To Serve

Blanch asparagus in boiling for 3-4 minutes. Immediately transfer asparagus to a bowl of cold water to stop the cooking process.

Thinly slice the chicken and divide between 2 plates with pea mash, asparagus and roast tomatoes.
