Korean Cheese Ribs

Method
Serves 4

First, make the sauce for your ribs by blending together the onion, garlic, apple and kiwifruit. Add the mixture to a saucepan with the

Korean chilli sauce, chilli powder, sugar and Coca-Cola and simmer for around 2 hours.

Set aside to cool and refrigerate for around 6 hours.

When ready to serve, add the ribs to a large pot, cover with water and bring to the boil. Boil for 20 minutes.

While the ribs are boiling, pre-heat the oven to 150°C.

Place the ribs in a large roasting pan and cover with your sauce.

Cook in the oven for around 15 minutes, then cover with mozzarella and cook for a further 5 minutes (make sure the cheese melts).

Transfer the cooked ribs to a plate, along with the cheese, and enjoy.

 


Chef’s Tip:

The earlier you prepare your sauce, the tastier it will be.

If you can, prepare it up to 3 days ahead.
