King Prawn Gulmohar

Method

Combine ingredients for the first marinade and marinate the prawns for 10 minutes.

Then combine ingredients for the second marinade to make a paste. Add the prawns to this paste and ensure all they are well coated. Leave to marinate for 1 hour.

Thread the prawns onto a soaked bamboo skewer and cook on a barbeque, or alternatively under a grill in the oven at 220°C, for 6-8 minutes turning occasionally.

Ensure prawns are cooked and serve with beetroot raita

Beetroot Raita 

Whisk the yogurt to a smooth paste,  add boiled beets, salt, coriander and mix well. Heat oil in a small wok, add mustard seeds and let them splutter, add red chili, curry leaves and asafoetida. Once popping has stopped add it to the yogurt mix. Refrigerate for two to three hours before serving. Mix well before serving as the yoghurt will turn a nice pink colour.
