Hanger Tartare, Herbs, Mustard, Rice Crackers

Serves 2-3
Mustard and Tamarind Dressing

Dissolve palm sugar in tamarind water, and emulsify remaining ingredients. Check seasoning.

Raw Beef

Put raw beef into mixing bowl, season with salt and chilli. Heavily dress beef with mustard and tamarind dressing and mix ingredients together until dressing is incorporated.

Spoon onto plate, place pickles on top, herbs then deep fried shallots and puffed wild rice.

To Serve

Serve with puffed rice crackers.

 


Chef’s Tip: Ensure mustard oil is pungent mustard oil, not mild mustard oil
