Hanabi’s Special Tamago

Serves 20

Preheat your oven to 200°C.

Peel and wash the shrimp. Along with the white fish, grind in a mortar and pestle until you have a smooth paste.

Lightly beat the eggs in a bowl before adding the fish paste and remaining ingredients.

Pour mixture into a baking dish. Bake in the oven for 7 minutes, then remove from oven and turn upside down and bake for an additional 7 minutes. Turn it back up and bake for a further 6 minutes.

To Serve

Turn it upside down again and allow it to rest for 4 minutes before slicing and serving.


Chef’s Tip: Hanabi’s special tamago is a sweet dish designed to be served at the end of a meal as a dessert.
