Wood Oven Grilled Cheese

with Granny Jean's Pickles

Aioli

Pour the olive oil into a measuring cup with a spout.

In a blender or food processor, combine the egg yolks, mustard and garlic.

Pulse several times until the garlic is pulverised. With the motor running, add the oil in a slow, steady stream. If the mixture appears to be about to split, add a little hot water and continue. Season with lemon juice, salt and pepper.

Soda Bread

Place flours, oats, bicarbonate soda, salt and sugar in a large bowl and mix together.

In a separate bowl, whisk together buttermilk and egg.

Mix the wet into dry and form a consistent dough – it should be a bit wet and sticky.

Transfer to a loaf or bread tin. Bake in a 190°C oven for about 50 minutes. Once ready, remove from oven and set aside to cool.

Cheese Mix

Mix all cheeses and spring onions together. Set aside.

To Serve

Pre-heat domestic oven to 220°C. If using a wood-fired oven, start fire so it’s nice and hot.

Slice the bread into 1cm slices. Spread generously with aioli (to the edges). Cover with grated cheese mix (nearly 1cm again and to the edges). Season with sea salt.

If using a wood-fired oven, make sure it’s nice and hot. Throw some sticks on for a good grill effect.

Place cheese bread in middle of oven (straight on the hearth) for about 3 minutes.

If using a domestic oven, place tray close to top grill in oven for 5 minutes.

Once cheese is melted, remove from oven. Dust with a good smoked paprika and serve with your own Granny’s pickles.


Chef’s Tip: If you don’t have homemade pickles on hand, store-bought pickles are a lesser substitute but will do!
