Ginger Beer Hot Cross Bun

Method

Fruit Mix

Mix all the ingredients into a container. Allow soaking overnight at room temperature.

Orange Purée: Wash whole oranges and ginger. Mix in a blender until you get a puree consistency. Set aside.

 

Buns

Combine flour, sugar, honey, salt, orange puree, water, milk powder, egg, yeast and sourdough (if using).

Add butter and keeping mixing until fully incorporated.

Add fruit mix gradually.

Allow dough to sit for 1.5 to 2hrs until it has doubled in size.

Divide dough into 80g balls and shape into tight balls. Place them on a wire rack.

Prove 1.5 to 2hrs until the balls have tripled in size.

Preheat oven to 180

Cross: Mix all ingredients until well combined, add more water to the mixture if too thick.

Pour into a pipping bag, and get ready to cross!

Pipe the cross mix over the balls and place in oven.

Bake 15 to 25 minutes or until golden.

 

Sugar syrup

Bring water to boil and pour in sugar. Add spice and stir until melted. Once ready, brush sugar syrup.

 

Serve warm with butter!
