Serves 2–4

Assemble all ingredients on board, starting with the oyster pate in the middle. Try to keep all the food groups together – place smallgoods together, and the seafood close to each other. Finish with lemon wedges and freshly sliced bread.


Chef’s Tips: This platter is just one example of the bounty of delicious produce Tasmania holds. We harvest our own oysters and mussels down at Freycinet Marine Farm, and make our own smoked oyster pate. Salmon is smoked on-site as well. If you can’t get hold of The Fishers’ products, aim for the highest-quality ingredients you can find.
