Crunchy French Toast

Method

In a medium sized bowl, whisk the eggs till incorporated. Add cream, milk, maple syrup, vanilla and spices, whisk together.

Submerge the sliced brioche in egg mix in batches of 2. Leave to soak for 30 seconds, turning the brioche over a couple of times. Lift the brioche out of egg mix, let it drain a little, then coat in cornflake crumbs. Heat a non stick pan over a medium heat, melt some of the butter, and pan fry the coated brioche till golden brown, turn over and place in pre-heated 180°C oven for 6 minutes.

To Serve

Remove from pan, place on plate. Place Toast on plates. Place a dollop of yoghurt on top and scatter over berries and pecans. Drizzle maple all over the top and around the plate.
