Chilli Fagara Fiery Comfort Noodles

Method

Serves 4

Soak the vermicelli noodles with boiling water in a bowl for 10 minutes or until softened. Drain.

Heat wok over high heat and add a dash of vegetable oil.

Lightly beat the eggs. Add to the wok and cook for about 30 seconds or until set. Add garlic, onions, mushrooms, red and green bell peppers. Cook for 1-2 minutes.

Add the char siu and continue to stir-fry for 30 seconds.

Add the vermicelli and toss for 30 seconds or until combined.

Finally, add the beansprouts and soy sauce, Chilli Fagara XO sauce, Chilli Fagara chilli sauce and salt. Gently toss for 30 seconds or until the noodles are evenly coated in sauce.

 

To Serve

Garnish with coriander, sesame seeds and green onions


Chef’s Tips: For a vegetarian option simply leave out the char siu and add more vegetables. Dried vermicelli is a Chinese rice noodle available in all Asian provision stores but you can substitute egg noodles or whatever you have available. If you can’t find char sui, you can also substitute for shredded pork, chicken or shrimp.
