Brussels Sprouts

with Roasted Parmesan
Method

Serves 8

Pre-heat oven to 220 Degrees Celcius.

Trim and halve the Brussels sprouts, then place on a baking tray.

Grate over the lemon zest, add the oil, then sprinkle with the chilli flakes and a pinch of sea salt and black pepper. Mix altogether.

Roast in the oven for around 10 minutes – the sprouts should start to caramelise in places.

When that happens, scatter over the Parmesan cheese and roast for a further 15 minutes.

The cheese should be crisp and golden brown, and the sprouts tender.
