Black Truffle Pappardelle

Begin by bringing a pot of water to a boil. Boil the pappardelle pasta until it is al dente, check the pasta instructions for details.

Place a pan on medium high heat. Once the pan is hot, add the oil and allow to heat. Add all of the mushrooms to the pan and begin the browning process.

Once the mushrooms are brown, add the shallots to the pan and cook until soft. Add the white wine to deglaze the pan and reduce.

After the wine has reduced by roughly 80%, add the cream and the asparagus.

Reduce the cream by half until thick. Add the black truffle pate and the parmesan cheese.

Taste the sauce and season with salt and pepper. Add the pasta to the sauce and toss to coat.


To Serve

Finish the pasta with the chives and place into a bowl.

Add some more parmesan cheese to the top of the bowl before serving.
