Baked Eggs

with chorizo & cannellini beans
Serves 6

Preheat the oven to 200°C.

Heat the oil in a large frying pan. Add the onion, garlic and chorizo and fry until onion is translucent. Add the capsicum, chilli, beans, tomatoes and paprika. Stir and simmer for a further 10 minutes.

Season to taste, add the parsley and take off the heat.

Place a large spoon of the bean and tomato mixture in the centre of six individual terracotta bowls or ramekins, then crack an egg either side. Season, place in the oven and bake for 6-8 minutes, depending on how well cooked you like your eggs.

To Serve

Remove from oven and serve immediately with crusty sourdough bread.
