Arroz con Mariscos

Seafood Rice

Heat the olive oil in a large frying pan over medium-high heat.
Add the chilli pastes, garlic, ginger and onion and saute for 5–10 minutes, or until the paste has thickened slightly. Set aside.


Melt the butter in a large frying pan over medium heat.

Saute the mussels, scallops, calamari, prawns and clams in the butter for a few minutes. Deglaze the pan with white wine before adding the cooked white rice and prepared dressing. Stir to combine then add the
shrimp, seafood stock, carrots, peas and corn.

Cook over high heat for around 4 minutes, stirring until the seafood is cooked through. When ready to serve, stir through coriander leaves
