At Pablo & Rusty’s, passion for sustainability and a love of coffee intersect to create one of Sydney’s most innovative and exciting specialty coffee roasters. Pablo & Rusty’s has grown substantially over the last few months, with the team introducing a range of new blends and plans for an all-digital cafe well underway. 

Pablo & Rusty’s was founded by coffee lover, Saxon Wright, in 2004. While it is obviously about the beverage, Saxon has always had a desire to create a business that doesn’t hurt the earth either. In his cafes this is more than just recycling empty milk cartons – it means sourcing coffee beans from trustworthy, sustainable farms, educating staff in sustainable practices and using good quality, sustainable cups. One of Pablo & Rusty’s Sydney cafes is even powered by a bio-generator, meaning it does not rely on electricity from the city’s power grid.

Pablo & Rusty’s cafes are also at the forefront of the technology revolution. Customers can purchase coffee and other items digitally, using only their smartphone or a Frank Green takeaway coffee cup, which has a chip that links to your credit card. Customers can also access cafe discounts via their smartphones when in range of a Pablo & Rusty’s cafe. The team sees this as the future of hospitality, something they intend to fully embrace with plans underway to open an all-digital, cashless cafe in Brisbane.

The recent expansion of the Pablo & Rusty’s brand has seen the company launch a series of new blends this year. These blends, from coffee plantations all over the world, were handpicked by the Pablo & Rusty’s team after they visited the farms in person and spent time learning about the crop, growing methods and the land and culture from which each bean comes.

The first of the new blends is Pablo & Rusty’s house blend, TrailBlazer. Blending beans from Brazil, Ethiopia and Panama, TrailBlazer is a sweet and complex, fruit forward coffee with hints of brown sugar, milk chocolate and red berries. Perfect for milk-based coffees, TrailBlazer is brewed with love by the Pablo & Rusty’s team and is a celebration of exceptional, in-season coffee.

Pioneer is Pablo & Rusty’s delicious organic coffee. A blend of three certified organic beans from Indonesia, Ethiopia and Honduras, Pioneer coffee is a smooth, all rounder with a buttery mouth feel and red berry and caramel flavours. The addition of milk to this blend adds malty notes and a hint of milk chocolate is discernible on the tongue.

The last of the new blends is a reminder of where it all began – Porter St. Named after Pablo & Rusty’s first roastery on Porter Street, this coffee is the strongest of the blends and is roasted slightly darker for more “oomph”. With malty and dark chocolate flavours, Porter St is a bold and rich coffee offering an excellent balance of strength and flavour and effortlessly weaving itself into everyday life.

Pablo & Rusty’s coffee blends are roasted every Tuesday and Friday to ensure freshness and quality. Sourcing directly from the origin means the coffee comes from the farm to the roastery as soon as possible after harvest and ensures the best taste in each cup. All of Pablo & Rusty’s blends and other coffees, including a range of single origin and decaf coffees, are available for purchase on the website or in store at one of the Sydney cafes.
