Karen Burbury established the unique venue in 2014. After opening the humble Watermill Tavern to great success in 2009, she found herself on the hunt for a bigger challenge. She discovered the perfect space just 97 steps down the road, and so jumped at the opportunity, transforming the venue into Cataract on Paterson. Karen built the new restaurant up from nothing and fitted it out with her own personal touches, including a brick wall from her beloved grandmother’s house.
These days, Restaurant Manager, Rebecca McDonald, Executive Chef, Chris Williams, and a highly talented creative team work together to produce a menu that changes with the seasons. In order to ensure the finest ingredients make it to your plate, produce is sourced as locally as possible, with beef and lamb found in the richest pastures of the north-west, oysters and fresh seafood arriving from the east coast and free-range chicken and fresh fruit, vegetables and herbs obtained from surrounding farms.
The flexibility of the menu means crowd pleasers such as the Tasmanian eye fillet with cafe de Paris butter and smashed roasted potatoes are joined by the Surprise Me option, where diners can choose to be fed completely at the chef’s creative discretion. For those steak savants who know exactly how you like your meat prepared, Cataract on Paterson’s Stonegrill option is for you. The unique dining experience uses volcanic-milled stone heated to 400ÅãC, allowing you to sizzle and sear your steak to personal perfection, and enjoy the full flavours and tenderness the cooking method offers.
The team’s quest to highlight local producers also extends to the wine list.
The Tamar Valley is well represented, but drops from other global regions also feature, ensuring there will be something for every palate. Cocktails, locally made beers and Tasmanian spirits also feature on the list, with the option of trying the Cocktail of the Moment or Birthday Surprise concoctions.
If serving the community through food and drink wasn’t enough, Cataract on Paterson’s team also works hard to ensure it is a business that gives back in other ways. In 2015 the team launched the Giving Back program, which supports local charities through donations from the team and patrons. Other initiatives, including Pay What You Wish and No Sunday Stress, also motivate diners and the Cataract on Paterson team.
This altruistic work, alongside the restaurant’s incredible culinary reputation, has not gone unnoticed. Cataract on Paterson has won a slew of awards in the past few years, such as Telstra Business of the Year – New Business, and Tasmanian Hospitality Association Best Customer Service. Karen was also recognised as a Telstra Business Woman of the Year for start-ups.
