Lentara Grove owners, Martin and Sophie Grace, have been living the dream among the olive trees for a number of years, developing and maintaining a passion for everything they create. Balancing a creative spark with a rigorous approach to quality and authenticity, they work incredibly hard to ensure every product is the best it can be.
Over the years, Tasmania has established itself as a prime olive growing region, thanks to environmental factors such as longer daylight hours in spring and summer. The state’s cooler climate also results in the slower ripening of olives, which enhances flavour development and complexity.
Like wine production, olive harvest depends on the progress of the season and can fall anytime between the end of May and July. Lentara is one of the few groves to cold press on-site as soon as the olives are picked. The resulting product is then stored in climate-controlled storage facilities, meaning the oils stay at optimum temperature prior to bottling and remain at the highest quality.
Each type of olive variety also holds a unique flavour and character. For example, Lentara’s Frantoio produces delicious, nutty table olives and a robust oil, which features complex herbaceous characters of rocket and, in some cases, green banana, with a peppery finish. By comparison, the Hojiblanca imparts flavours of freshly cut grass and tropical fruits, with a sweet and creamy palate.
Martin and Sophie’s grove features over 700 mature olive trees on 20 hectares, with established processing facilities on-site. As demand has grown, the duo has installed an active planting regime, slowly increasing the allotment to 1,500 trees. This growth has allowed the forward-thinking couple to diversify and expand what’s on offer. As well as producing award-winning cooking oils, Martin and Sophie have created a range of natural skincare products that celebrate the benefits of all-natural extra virgin olive oil.
The terroir and microclimate combine to make Martin and Sophie’s products truly one of a kind – its north-facing orientation on a ridge above the Tamar River means the trees benefit from maximum daylight, essential to the ripening of the fruit. This factor is also reflected in the property’s name, which translates to ‘sunrise’ in a local Aboriginal language. Rich, dolerite soils also provide a fertile bed of nutrients, which make for happy, healthy trees.
Lentara Grove is open to the public by appointment, where guests can enjoy a guided tour of the property and the processing facility, and learn about the journey from tree to bottle. A selection of gourmet produce can be purchased at the farm door, including extra virgin olive oils, infused oils, table olives and the skincare range.
