When Troy Parry, General Manager of Tourism Services at Trippas White Group, returned to Sydney in 2006 after a decade living in New York, he realised the Sydney Tower site was something special. He jumped at the opportunity to create a beautiful and memorable banquet experience that did justice to the site’s panoramic views.
As you would expect from a banquet, the tables are laden with an overwhelming array of dishes, but this isn’t your typical buffet dining experience. Head Chef, Mohamed Kharboush, communicates his passion for global cuisines through the diverse and flavourful menu. This inspiration comes to life in high quality, fresh fare, with ingredients sourced from a number of local suppliers, including Vic’s Premium Quality Meats.
There is a dish to satisfy any taste and whim among the spectacular selection. Start with something small, such as the freshly baked focaccia, ready to scoop up a range of Mediterranean style dips. Don’t miss the fresh seafood; the day’s selection might include anything from prawns and mussels to freshly shucked oysters.
If seeing Sydney from the sky has reignited your love for Australian cuisine, tuck into the 16-spiced kangaroo rump served with pearl couscous, dried fruit and a mizkan vinaigrette.
Take a journey through the cuisines of the world: Korean vegetable dumplings are the perfect accompaniment to the vegetarian brown rice salad with seaweed and sesame ginger dressing, while the indulgent American-style glazed barbecue pork belly is complemented by a side of garlic-roasted potatoes and buttered green beans.
Vegetarians will enjoy the wide selection of delicious salads and hearty meat- free dishes, such as the aromatic lentil dhal with a side of chickpea and barley salad tossed with pomegranate and apricots.
Whichever cuisine you choose, leave room to sample a few of the treats at the dessert bar, including profiteroles filled with malt crème pâtissèrie, roasted five-grain panna cotta with green tea jelly, and chocolate coconut gateau topped with strawberry cream.
In line with the quality of the fare, the wine list is overseen by talented Sommelier, Andres Aragon. Andres brings more than 10 years of industry experience to Sydney Tower Buffet, having previously worked at renowned restaurants Porteno, Wildfire and Rockpool Bar and Grill. Award-winning wines grace the list – a majority are sourced from local wineries, which are carefully chosen by Andres to complement the food on offer.
