If you love the likes of Riley Street Garage, or if you frequent Surly’s and call The Village Inn your local, then there’s one more venue you’ll need to add to your list – Stanton & Co.
The new Parlour Group venture opened on 15 November, and has already attracted quite the buzz. And if you’re feeling a few NYC vibes after a first visit, you won’t be far off the mark, with the design drawing inspiration from New York’s Meatpacking District. An expansive bar made from solid walnut oak, brass and marble navigates one side of the venue, while the other reveals the stunning dining room complete with an open kitchen. The talented designers at Alexander & Co. can be thanked for the industrial style fit-out, which sets the scene for an edgy and contemporary dining experience.
Commanding Stanton & Co.’s kitchen is Group Executive Chef Regan Porteous, who, together with Head Chef Marcelino Papio, has put together an innovative Australian menu with inventive Japanese flourishes.
Expect to see dishes such as tuna tartare with puffed rice and cured egg yolk sitting on a rice cracker bed, or a Morton Bay bug tempura served with bottarga and drizzled with ponzu mayo. Diners are invited to opt for either the a la carte menu, featuring fast, fresh and simple dishes ideal for weekday lunches, or the more extensive dinner menu, which is inspired by long nights shared with good company and plenty of good food.
The Stanton & Co. name is a nod to the property developer, Richard Stanton, who is credited with transforming the Rosebery locale into an industrial suburb between 1911 and 1920. Industrial in every sense, the site went on to be the home of Cyclone Fence and Gate Co. throughout the 1930s before gradually emerging as a part commercial, part residential inner-southern Sydney suburb. Nowadays, Rosebery is making its mark as a culinary centre in Sydney’s already heaving food industry.
Before even opening its doors, Stanton & Co.’s imminent opening has created a hum of excitement across Sydney’s food scene, and if the success of the Parlour Group’s previous venues is anything to go by, the hype around Stanton & Co. is well and truly justified. Stanton & Co.’s doors open on Wednesday 15 November and the restaurant will be operating for lunch, dinner and drinks from Wednesday to Sunday.
