Circular Quay is always alive with activity – office workers rush to and from the ferry and languid tourists do their rounds about the sparkling Sydney Harbour. Q dining boasts impressive views to all the action from the second level of the Pullman Quay Grand Sydney Harbour hotel.
Having received a refresh in 2013, the restaurant reflects the opposing forces of land and sea visible from its windows. Feature lighting brings a sense of warmth and intimacy to the venue, while soft tones in the furnishings are contrasted by marble tabletops and primary coloured glass accents.
Executive Chef, Stefan Brademann, recalls a childhood filled with the aromas of his mother’s cooking. For him, food is as much about flavour as it is about the gathering of people and sharing of stories. Stefan has an impressive career behind him, including working for Heston Blumenthal at the renowned restaurant, The Fat Duck. He has learnt a variety of cooking techniques along the way but the menu at Q dining espouses a simple approach, where produce and seasonality is key.
Stefan ensures that the main ingredients speak for themselves in all dishes and where possible, produce is locally sourced. He works closely with his suppliers to ensure that his ingredients are fresh and of optimal quality.
Charcuterie is a core component of the menu and it is the ideal way to start your meal. Indulge in a selection of cured meats and don’t forget to include the world famous Joselito jamon.
Jerusalem artichokes and truffles come together with macadamia nut consommé and parsley stalks for an irresistible entree. Move onto second course and try the Humpty Doo barramundi with creamed rice, pork hock and Brussels sprouts, or the tender Wagyu sirloin accompanied by steamed eggplant with mustard leaf and mushroom ketchup.
Side dishes are designed to enhance the flavour profile of the mains. Opt for the fresh green bean and snow pea salad with pistachio pesto, or try the kipfler and purple congo potatoes.
Classic desserts are given a modern twist. White chocolate rocky road comes together with meringue, passionfruit and lemon curd, while a selection of cheese sourced from Australia and Europe will accompany the last of your wine.
The much acclaimed wine list has been carefully curated by Q dining’s two resident Sommeliers, Adam Leonardi and Atsuko Asano, and is visible on the extensive wine wall. Their wine philosophy encompasses three core pillars and includes rising heroes, lesser-known gems and some of the greats, so you’ll be sure to find something to your taste.
