Phamous Kitchen is bringing a touch of South Each Asia to Balmain, dishing up contemporary Vietnamese cuisine that’s both naughty and nice.

When they opened Phamous Kitchen’s doors in January, Kate Tran and Thomas Thanh Pham set out to offer Balmain locals Asian dishes with a modern Australian twist. As Head Chef, Thomas drew on his previous culinary experiences and Asian heritage to create a menu of reinterpreted South East Asian fare.

Therefore, the starters, salads, mains and share plates offer a wide range of flavours from Vietnam, with influences from Thailand and Malaysia. Small bites veer from the traditional to a little left of centre, with plates like crab, prawn, pork and wood ear mushroom Hanoi rolls and seared scallops on betel leaf.

Mains are even more sophisticated, with dishes like fried whole snapper with three sauces and jungle aromas, and the mini turmeric tarts with prawn, coconut gel, smelt roe and baby coriander. However, the main event has to be Phamous’ specialities – the pork crisp pancake and gluten-free jade roll. The pancake was created by Thomas and

contains a unique combination of pulled pork, coconut, micro herbs, goat’s curd and sauerkraut. Meanwhile, the gluten-free jade roll is a dish usually only found in a tiny village in northern Vietnam, and features pork, prawn, omelette, vermicelli and herbs wrapped in fresh leaves with lava sauce.

The secret to Phamous Kitchen’s success lies in the ingredients Thomas uses. He sources rice paper from a secret supplier in Vietnam, while meats, fruits and vegetables come from as close as possible.

Vegetarian and gluten-intolerant diners will also have no trouble finding something delicious to devour. Most options come sans wheat, and there’s an entire menu devoted to vegetable and faux meat dishes.

Phamous Kitchen is perfect for a weekend lunch after a spot of shopping or for dinner any night of the week. Takeaway and home delivery are also available if getting off the couch seems all too hard.
