Carmen Milozzi, Alessandro Milozzi and Charlie Colosi have upheld the reputation of Oliveto for more than decade, fusing their love of hospitality, produce and the stunning location to create special dining experiences.
The team brought on board Head Chef, Nick Fakas, who oversees the menu with a careful attention to seasonality and local produce. Traditional Italian techniques are used to make pasta, bread and desserts in-house, while meats, seafood and fresh vegetables are sourced from local suppliers wherever possible.
At lunch or dinner, soak up the peaceful surrounds while snacking on a selection of appetisers, such as moreish arancini with mixed mushrooms and provolone; herb crostini with green olive tapenade, or fresh Sydney Rock oysters served with a refreshing lemon-pepper granita.
Given the location, Oliveto’s seafood is the order of the day. Specials change frequently depending on the catch of the day, but expect simply prepared fresh seafood such as Nova Scotia scallops paired with broad beans, guanciale and carrot puree, or grilled Western Australian scampi with parsley, garlic and extra virgin olive oil. Australia meets Italy in the form of house-made tagliolini with blue swimmer crab, cherry tomatoes, zucchini and chilli.
Offerings from the land are equally tempting: try the potato gnocchi with eggplant, tomato, smoked ricotta salata and a hint of basil, or indulge in the butterflied spatchcock served with carrot, zucchini, celery, chargrilled lemon and rosemary. Salads are not forgotten here – the combination of radicchio, witlof and fennel tossed with pecorino, capers and white balsamic is a flavoursome accompaniment to any meal.
An Oliveto trademark is the inventive dessert menu. Flaky millefoglie is accompanied by vanilla mascarpone and marinated strawberries, while apple sfogliata – shell-shaped Italian pastries – are paired with cinnamon gelato and butterscotch.
The wine list includes an extensive selection of local wines and a stunning array of Italian varietals, but don’t be intimidated – Sommelier, Danilo Lonoce, is on hand to suggest a drop to match your tastes and budget. More than 15 wines are available by the glass, so you’re free to experiment without investing in a bottle. In keeping with the waterside setting, cocktails are also available – sip on a bellini or Aperol spritz and while away the afternoon by the bay.
Only a short distance from Stadium Australia and Homebush Bay, Oliveto is an ideal spot for a pre-event meal. The tranquil waterside atmosphere means the venue often hosts wedding and engagement parties, and the food and location set the scene for a memorable occasion.
