Tucked away in the Four Seasons Hotel in downtown Sydney is the CBD’s latest culinary offering – Mode Kitchen & Bar. The moodily-lit space strikes an intimate balance with its Mediterranean-inspired menu paired with a “classic cocktail offering”.
The aesthetic – designed by Luchetti Krelle – is a combination of different wood tones, pendant lighting, blue velvet notes, and nooks and crannies with low-slung seating strewn throughout the 200-seater space. The 9-metre bar, led by manager, Simone Cordedda, is complemented with geometric, under-lit shelving and fresh flowers.
Head Chef Francesco Mannelli leads the charge in the kitchen, with April Shen as Sous Chef. His brief? “Maximising the best produce of the season in our dishes”.
“I am inspired first by the ingredient and then create the dish,” Francesco says. “I don’t like too many elements on one plate.”
That seasonal approach is reflected in dishes such as catch-of-the-day fish, served whole with tarragon butter; lamb shoulder with saltbush; or Hiramasa kingfish sashimi with macadamias and sweet-and-sour onions. Cheeseboards use Australian cheese where possible, paired with condiments – including quince paste and chill jam, made in-house.
“I like to travel the country to meet producers,” Francesco says. “You can tell when people are truly passionate about what they do, so I enjoy working with them the most.”
A separate bar menu caters to the quick-drink-and-a-bite customers, and the drinks menu featured over 200 local and international wines; Australian spirits; and signature cocktails (such as the house gin & tonic, made with Archie Rose gin and StrangeLove tonic, or the New Fashioned, which is heightened with eucalyptus bitters).
