It doesn’t get much fresher than at the waterfront eatery, Manta. From the quality of the seafood to the bright white and teal colour of the building, it delivers a dining experience that will leave you feeling refreshed.
Located in Woolloomooloo, Manta is run by Rob Rubis, a man famous for his achievements and dedication to the hospitality scene. With over 32 years in the industry and over 35 restaurants under his belt, it is safe to say he knows what he doing, and he does it well. With Manta, he has placed a focus on freshness and simplicity. All ingredients are sourced from within Australia, including meat that comes from Rob’s family farm in Queensland.
Helping him bring these local ingredients to the plate are Executive Chef, Daniel Hughes, and Head Chef, Steve Hetherington. Both chefs have had a lifelong passion for food, with Steve impressing his family from a young age with his own homemade pizzas. Now, Steve and Daniel work together to wow the folk of Sydney with their attention to detail in each dish.
With its prime location on the waterfront, it would be a crime to come to Manta and not try the seafood. Rob places great pride in knowing where his produce comes from, as well as knowing the name of the fishermen who caught the fish. Generous sized prawns, perfectly seared scallops and beautiful pink salmon can all be found on the menu. There is even a choice of live oysters from several regions of Australia. For something with a Manta twist, try the lobster slider with chipotle mayo; blue swimmer crab lasagne, or the miso toothfish with red cabbage and Japanese flavours.
It’s not just seafood on offer. Try the grass-fed eye fillet with Jerusalem artichokes, porcini puree and thyme, or a selection of handmade pasta. To top it off, the deconstructed apple and pear tart served with spiced ice cream is just as beautiful as it tastes. Don’t like making lots of decisions? Opt for the considered tasting menu, where the only choice you have to make is whether you’ll be eating five or six courses.
Sommelier, Samuele Sampirisi, has you covered for all your pairings, whether trying the tasting menu or not. His knowledge in both local and overseas wine is extensive, but for an exclusive drop, try Manta’s own wine label, created in collaboration with Farr Wines.
Renovations in 2015 saw more charm and style added to the restaurant. On a summer’s day, embrace the seaside location by sitting outside at the crisp, white tables overlooking boats sitting serenely on the water. At night, the dining room offers a more intimate experience. Brass chain chandeliers hang from the roof, with the bronze tones of the lights reflecting off the central white drape to give the room a warm and welcoming, yet dramatic vibe.
Waterfront dining is a common occurrence in Sydney, but Manta takes it up a notch. The combination of the freshest Australian ingredients, passion in every dish and stylish interior make a seaside view just one of the many inviting features about this Woolloomooloo gem.
