Inspired by the director, Maurice Terzini’s Italian heritage, the menu is designed to give you a seasonally changing opportunity to sample dishes that reflect the depth of Italian cuisine. Under the careful guidance of Icebergs’ Head Chef, Monty Koludrovic, each dish is created with these Italian values in mind, sourcing the best possible produce, including sustainable seafood, artisan-produced small-goods and the occasional hint of native Australia, just for context.
Maurice is best known for stamping his indelible mark and style on both the Sydney and Melbourne dining experiences. Born to Italian parents in Melbourne, early years spent back in Italy cemented in him a love of his culture and heritage, awakening a life-long passion for Italian hospitality. At the age of 23, Maurice opened his first venture, Caffe e Cucina on Melbourne’s iconic Chapel Street, with the cafe radically altering perceptions and conventions around the dining scene at the time.
A string of successful hospitality ventures has since followed, topped off with Icebergs Dining Room and Bar on the stunning cliffs of Bondi in 2002. More than 16 years from its opening, Icebergs remains a pinnacle of style and dining in Australia, something that does not look to be changing in the years to come.
