When you hear Mexican food, chances are your mind will go straight to nachos, tacos, tequila and, of course, margaritas. Flying Fajita Sistas promises all of this and more, combining fresh Australian produce with authentic Mexican techniques.

Growing up in Seattle, Joe Slakey’s go-to food had always been Mexican. He learned the basics of the cuisine from his friends, their mothers and their abuelas (grandmothers). It didn’t matter if he was working at a fine dining restaurant or a rustic Italian restaurant – when he came home, he would almost always cook Mexican.

If Joe had friends over for dinner, he’d cook tamales; if he was having a barbecue, there would be tortillas. So when he arrived in Australia to be with the love of his life, and now wife, Liz, it was a shock to find that he couldn’t hit the streets and pick up some tacos de lengua with ease.

In search of his favourite food and with more than 20 years of culinary experience, Joe quickly found work helping to open Glebe’s Flying Fajita Sistas. He immediately felt at home, offering menu suggestions that went beyond standard Australian Mexican fare to more authentic dishes, including tamales, sopes and huaraches. Joe had been thinking about branching out on his own when the venue he had helped run for seven years was offered to him.

For Joe, true Mexican cuisine starts with using only the freshest local and seasonal produce. It’s hard to go past a serving of fajitas – chargrilled strips of meats and vegetables are served with soft tortillas, traditional beans and rice, as well as your choice of condiments.

Taco fans will be happy, with up to eight different offerings to choose from. Tomatillo braised beef is served with black beans and chipotle salsa, while seasonal produce brings grilled salmon or soft shell crab tacos to the menu. If you’re after a little something extra on the side, opt for a simple serve of charred corn on the cob or share a palmitas salad with hearts of palm, orange, toasted pepitas, radishes and queso fresco.

On balmy nights, a serve of mole ice cream is the perfect option for dessert, with an enticing combination of chilli, chocolate, nuts and spices. Joe’s focus on seasonal produce ensures there’s always something new to try, from oxtail tostados to fruit infused liqueurs.

It would be a crime to have Mexican without at least a little bit of tequila, and Flying Fajita Sistas’ offerings do not disappoint. As the menu states, tequila is more than just shots – choose from one of 70 tequilas on offer or indulge in a tequila flight with three different flavours.

There’s more than just tequila to choose from too. The bold flavours of Mexican food are the perfect match for a refreshing margarita or a cerveza from the selection of craft beers served on tap. A South American favourite, the pisco sour, is given a unique twist with the addition of red grapefruit juice and house-infused rosemary syrup.

While diners may enjoy Flying Fajitas Sistas’ offerings after a hard day’s work, for Joe there are no long days – he’s just happy he gets to make tacos for a living.
