Flour, eggs and water – three of the simplest ingredients, yet they are key to pasta as well as so many hearts all around the world.
Flour Eggs Water owner-chef, Eugenio Maiale, has once again rolled up his sleeves to deliver the good people of Sydney another Flour, Eggs, Water pasta bar which mimmicks the philosophy behind his Tramsheds’ Harold Park restaurant – ‘rethink pasta. get back to basics. eat seasonally.’
This is the fourth offering from A Tavola, and once again, Eugenio is doing exactly what he does best, sourcing artisanal produce in order to create simple, seasonal dishes. Those who have already dined at the Tramsheds’ venue will agree that this man has quite the skill for fresh homemade pasta. Topping his classic dishes with fresh Italian flavour combinations such as lamb, tomato, white wine and Parmesan, or pumpkin, goats cheese and nasturtium, there is sure to be a few offerings that will leave your mouth watering and your stomach growling.
However, what it is that makes this place so much more than your average Italian pasta bar, is what you are offered beyond just pasta. All food is perfectly paired with a drop from Four Eggs Water’s carefully collated wine list. Boasting a selection of organic, preservative-free varietals from Italian and local New South Wales wine makers, this list brings you the very best of both old and new world wines. Though what may really make you smile is that the good folk at Flour Eggs Water have made beers on tap a thing of the past, and instead will offer you a glass of house red or white, which they provide on tap – mama mia!
The thread of simplicity travels through not only the food and wine, but also to the restaurants’ fit-out. Diners can gather around communal tables, perfect for sharing, overlooking the impressive open kitchen which is lined with homemade pasta hanging out to dry before it is expertly prepared for your dinner.
An easy dining option that is just as smart as it is simple, Flour Eggs Water has filled the hole for casual dining in Surry Hills. This is sure to be a go-to option for pasta fanatics near and far, eager to hoe into a bowl of deliciousness closely rivaling that of the most talented of Nonnas.
