Bistro Rex delivers a slice of Paris to Potts Point, offering contemporary bistro dining within a classically French space.

The new venture is the brainchild of some of Sydney’s best – both the Head Chef, Jo Ward, and sous chef, Michelle Powell, are part-owners, along with hospitality veterans Josh Dunne, Nick Bowden, Kirk Mathews, Pete Curcuruto, Baci Moore and Michael Anker. Each brings their extensive experience to the table, resulting in a slick and sophisticated dining event.

With Bistro Rex, they’ve created an homage to the bistros of laneway Paris. No stone has been left unturned; while the menu is an obvious tribute, the design, wine list and even service all possess the hallmarks of French hospitality.

Upon entering, you’ll probably be welcomed by one of the A-Team, taking your jacket and guiding you to your seat. Expect the service to remain at this level throughout your entire meal – champagne corks are popped at the table and every request is handled with ease.

The adventurous French colonial menu may seem overwhelming at first, but for those who dare to dine, there’s much to be discovered. Heritage Rock oysters, served mignonette, set the tone, with small dishes like king prawn beignet with cucumber, cucumber, iceberg and fermented chili aioli, and chicken liver parfait, accompanied by a sweet and sour jelly, continuing the theme.

When it comes time for the larger options, expect much discussion – how does one choose between the steamed market fish with smoked oyster, kohlrabi and purslane, and the pork cutlet, accompanied by savoy cabbage and burnt apple puree? If you just can’t decide, ask the staff – they’ll be able to guide you in the right direction.

They’ll also be able to guide you on the wine list. Co-owner Josh has designed a list 300 bottles strong, with both local and French drops appearing. If it’s a cocktail you’re after, never fear; each classic has a modern twist and aims to honour some of the world’s greatest bars.

The fit out carries the bistro vibe a long way. Featuring French oak interior, timeless mosaic tiling and an eye-catching 13-metre-long zinc bar (poured on site), the restaurant takes on a comfortable and casual approach. What’s more, the open kitchen and bar seating lends to the sense of neighbourhood and community the team wanted to express.
