It’s hard to believe it’s taken 21 years for two of Sydney’s icons to finally meet. Breakfast buff, Bill Granger and Bondi Beach – arguably the most famous stretch of sand in the country – have created a beautiful partnership in the form of Bills Bondi. Together, they are dishing up signature hotcakes with a side of ocean air, combining two of Australia’s most-loved elements into one clean-lined, brightly lit space. 

Bills Bondi opened in September 2014, coinciding with the 20-year anniversary of Bill’s very first venture in Darlinghurst. It has all the best bits that Sydneysiders have come to know and expect from one of his venues, including a healthy menu that places an emphasis on seasonal, fresh, locally sourced produce.

Take a seat on one of the outdoor tables that spill onto Hall Street, or get comfy in one of the leather banquettes inside for a true Sydney meal. If you’re there before midday, stop by to try the signature sweet corn fritters with roast tomato, spinach, bacon and avocado salsa, paired with a pineapple, kale, coconut water and coriander smoothie. If your sweet tooth needs to be nourished, turn to the ricotta hotcakes served with banana and honeycomb butter, along with a salted caramel shake.

Come lunch, try the citrus quinoa with sprouting sunflower seeds, beetroot, zucchini, chilli and feta or the crispy pork belly and chilli jam brioche roll. If your stomach is rumbling, opt for the ginger cured prawn and spring onion egg white omelette with spiced salsa rosso, or the wagyu burger complete with grilled Swiss cheese, club sauce, impatient pickles, iceberg lettuce and ranch dressing.

Wash everything down with a cocktail – the Bills spiced bloody mary features Belvedere vodka, clamato, Korean chilli, lime and coriander, and will ensure even the staunchest of hangovers disappear.

When the sun sets, turn to fried calamari with green papaya, nuoc cham, herbs, peanuts and crispy shallots, or try the turmeric spiced chicken with slaw, peanuts, lime and coconut dressing.

Whatever the time of day, there’s a drink on offer, with juices, smoothies and shakes giving way to cocktails and beer as the sun moves west.

Bondi locals have taken to Bills like a fish to water, embracing it as one of their own. It’s not hard to see why.
