Executive Chef, Jack Wang, is in charge of presenting a vibrant menu for all to enjoy. Born in North China, he moved to Dublin when he was 18 years old to pursue a love of Western cooking. Here, he worked to master the art of European fine dining, working at Michelin-starred restaurants until he moved to Sydney.
At The Bar at Sir Stamford, Jack transforms fresh, locally sourced ingredients into flavoursome dishes that jump off the plate and onto your palate. The menu can be tailored to your hunger levels – taste, share or indulge, it’s totally up to you.
Small bites such as freshly shucked oysters, flash fried squid, and mushroom and truffle arancini are a perfect accompaniment to a drink with friends, while pizzas, burgers and salads are available when your stomach starts to grumble.
If you’re after something spicy and hearty, order from the Argentinian style grill – the grilled pork tenderloin with salsa verde or the chargrilled lamb fillet with chimichurri and preserved lemon will be sure to sate even the hungriest diner. In true Sydney style, there is an Asian-inspired twist to the menu – try the Cambodian-style barramundi poached in a spiced coconut sauce with fragrant rice.
In addition to the gourmet menu, The Bar is famed for its elegant and sophisticated English-style high teas. It offers three high tea experiences – each of which includes fluffy homemade scones. The Deluxe Devonshire also includes finger sandwiches and a chocolate brownie, while the Traditional builds on this with the addition of other desserts and a glass of Australian sparkling.
