Pablo & Rusty’s Lane Cove, a local coffee hub sits between the city and the suburbs and right in the heart of the community, where locals gather to meet, share stories and catch up on news, all over a delicious specialty coffee.

Sustainability is vital to Pablo & Rusty’s operation and here you’ll find only freshly harvested coffee that is sustainably and ethically produced. They work directly with the farmers who produce the beans whenever possible. This allows them to continue researching new and innovative agricultural and processing methods to achieve the best specialty coffee at harvest.

Head Barista, Ben Richardson, is part of the QA team at Pablo & Rusty’s and heads up the team of baristas at Lane Cove. Dedicated to quality, Ben can be found between the P&R stores – at wholesale cafes brewing Pablo & Rusty’s or at the training bar and roastery cupping the latest coffee offerings and creating new brew recipes for the P&R clients.

Amongst the ever-changing coffee offerings at Pablo & Rusty’s Lane Cove is the San Agustin from Guatemala. Harvested between January and April, just before the new rains come for the next season, the cherries are carefully picked by hand and delivered to the mill at Santa Clara each day between 4pm and 7pm. They’re then fermented for up to 20 hours, dried on raised beds for 15 to 20 days and then milled right there on site. Excellent as a filter brew, maximising floral aromatics and sparkling acidity with a sweet and syrupy lemon cordial flavour.

The food is carefully selected and sourced from suppliers who operate with similar ideals to P&R. Generally partnering with local, small, artisan producers, Pablo & Rusty’s make sure that the produce they buy in for their seasonal menu is traceable and sustainably sourced.

Pablo & Rusty’s entire ethos centres around making a positive contribution – to the farmers and producers at origin, to the environment and to their customers. One taste of their coffee proves they’re right on point.

It’s not hard to see why the locals flock to this corner cafe in the heart of Lane Cove. P&R sits within the bustling plaza and is a core part of this community hub. The industrial warmth of its zinc and copper finishes are complimented with glass-jar lights and milk crate pendants. The staff are friendly and coffee focused professionals, ready to brew the latest filter coffees or single origins. Coffee is their core product, and this influences everyone and everything in store.
