Owners Jai Pyne and Tara Byrne opened the doors to Fleetwood Macchiato in 2012 with the intention of curating a menu that showcases fresh, seasonal produce and can be devoured in a diverse and inclusive atmosphere. Alongside Jai and Tara, Head Chef, Scott Duncan is no stranger to the demands of Sydney’s heaving hospitality scene, having manned the kitchens of The Butler in Potts Point and his own venue, Brighton The Corner in Petersham among others. Scott’s commitment to adventurous and inventive cooking makes for an exciting menu that constantly changes according to the season.
Particularly prevalent is his taste for curing and smoking, like the hugely popular Brisket Sandwich, which is brined, smoked and roasted in-house and served with Chinese cabbage and pickled watermelon. The team at Fleetwood Macchiato, including Head Barista, Cass Hay works closely with Sample Coffee, which supplies the house blend, Pacemaker. The blend is dark roasted with fruity undertones and hints of chocolate, ensuring that it works beautifully with milk or on its own.
