In anticipation of the opening of Sauce Brewing Co.’s flagship Marrickville Brewery, founder Mike Clarke has announced his new team mate and head brewer, Brodie French.
Sauce Brewing Co. sprung from a backyard dream turned career for Mike. Graduating from stovetop brewing to launching the brand as a gypsy brewer in 2016, Mike has grown the business from the bottom up, brewing hop sauce pale ales, IPAs and double IPAs to an immense reception among Sydney’s craft beer buffs. Now with the flagship micro-brewery well underway in the heart of Marrickville, he has enlisted the expertise of experienced brewer, Brodie, to lead the way as the brewery opens to the public in time for spring.
Taking on an ambitious vision for the small Sauce Brewing Co., Brodie is set to apply his extensive knowledge picked up across BrewPack and Icon brewers to nurture the Sauce team to its full capacity. Of the new head brewer Mike said, “Brodie really impressed us with his knowledge and attitude to brewing. His ‘big brewery’ thinking when it came to processes and quality control will be a huge benefit to us. It’s something a lot of small breweries lack.”
The Marrickville brewery will feature a large taproom where visitors can slurp up Sauce directly from the source, and a large outdoor beer garden.
