The past decade has spurred a revolution in the world of brewing with an emergence of boutique, craft ales on the market. The team behind Wildflower Brewing and Blending is taking this one step further, going back to the very origins of brewing cultures and placing emphasis on the importance of wild fermenting and native foraging. The result: high quality and totally unique brews.

The brainchild of brother-in-laws and owners, Topher Boehm and Chris Allen, Wildflower is their raw and rustic vision for an authentic Australian brewery. Stepping away from traditional brewing methods and cultures, the pair is changing the face of how Australians brew, drink and appreciate beer.

The name Wildflower is spurred from their mandate to produce 100% wild ales, foraged from native Australian products. Cultures are closely linked with flora; thus ‘flower’ was a fitting component in the brewery’s branding. Aside from the nuanced beauty and blossoming imagery of the name, it encapsulates the very origins of the beers and their pivotal ingredients.

Wildflower is just one within a larger movement of Australian breweries committed to rediscovering and reinvigorating the flavours of natural fermentations. Likened to artisan bakers going back to basics by adopting ancient methods of baking bread, Topher notes the importance of traditional brewing methods and the impact that simple, naturally foraged cultures have on distinguishing one beer from the next.

The Wildflower house culture is foraged from New South Wales. When combined with old barrel-aging techniques that blend newly brewed beer with existing barrel-aged brews, it makes for a character unlike anything you’ve ever tasted before.

To kick things off, Wildflower is serving up a range of three of its finest brews straight from the source – Gold, Amber and House ales. Whilst there is no kitchen attached to the actual brewery, their convenient position in the centre of Marrickville means that there are plenty of culinary options to choose from in the near vicinity. So grab a bite to eat before or after your glimpse of the inner workings of the Wildflower Brewery.

Topher and Chris have opened Wildflower’s doors in early June to great reception. The brewery is open on Saturdays from 2 until 7pm, during which guests can sample beers and take some home. For groups of 12 people between 12 and 1:30pm, the option for brewery tours and tutored tastings are also available to learn, see, smell and taste everything there is to know about contemporary brewing. Alternatively, pick up a brew or two to enjoy at home, with a number of venues including the Dolphin Hotel Wine Room and Automata stocking this up and coming beer.
