Cigars, cocktails and Chicago deep dish; Darlinghurst’s brand-new bar is all about the three ‘C’s. Johnny Fontane brings a slice of the mob life to the inner east of Sydney, delivering a drinking experience that’s inspired by the fictional character of the same name.
Thomas Derricott is the man behind the mob. After co-founding Catmosphere Cat Cafe in 2015, he partnered up with The Bear Bar’s Andy Curtis to create a brand-new concept. They recruited interior stylist Belinda Cendron to spice up a traditional Sydney terrace, breaking it up into four distinct spaces: a Rat Pack downstairs bar; a Sicilian-style courtyard with a large central citrus tree and lush vines, a lounge for drinking and dining on the first floor; and the cigar deck with a retro-resort Cuban feel.
No matter where you perch, the drinks menu, designed by Andy, stays the same. It focuses on three specialities: signature cocktails that hero Italian liqueurs; modern twists on classics like the negroni, and wines and craft beers from Italy and the US.
The food offering will also include a signature: the Chicago deep dish. Thomas and Andy brought on ex-Longrain chef, Cy Gwynne, to give the traditional dish a spin, as well as design a menu full of Italian classics – think pasta, antipasto, arancini, cannoli and more.
Cooked in a deep dish pan, blurring the line between pizza and pie, the Chicago deep dish is a delicacy not yet explored by Sydneysiders. Try the original with pork and veal meatballs, or opt for the vegetarian option, with marinated mushrooms and grilled zucchini.
In true Rat Pack style, Johnny Fontane also offers the opportunity to purchase a cigar, which guests can enjoy with a cocktail on the cigar deck.
A soundtrack of swing, Italian jazz and slick hip hop provides the perfect background music for all wheeling and dealing, creating an atmosphere for gangsters and glitterati alike. Johnny Fontane’s is soon to become a guilty pleasure, a place where all the good things in life – cigars, cocktails and Chicago deep dish – can be enjoyed in style.
