Perched on the banks of the city’s luxe Marina Bay is OLA Cocina del Mar. This authentic Spanish eatery offers smoky, oven-charred paellas, Spanish-inspired meat dishes and fresh, sustainably- sourced seafood to all who enter its doors.

Peruvian chef, Daniel Chavez, established OLA Cocina del Mar in 2012. Daniel’s passion for food was ignited in his early teens when his family moved to Florida where he learned the basics of his craft before embarking on a culinary journey across the globe to destinations including Spain, France and Dubai.

In Spain, Daniel’s eyes were opened to the importance of using seasonal produce, and he began to explore new cooking techniques and the world of fine dining. In 2010, Daniel helped Spanish chef, Santi Santamaria open his restaurant in Singapore, before launching his own debut venture in 2012.

OLA, translating to ‘wave of the sea,’ is the culmination of Daniel’s time spent working at restaurants across the world and reflects a career’s worth of lessons and experience. Many dishes are a direct reflection of Daniel’s training in Spanish cuisine, while others pay homage to his homeland in Peru.

Visitors are invited to take a seat and marvel at Singapore’s first open kitchen. Begin your OLA experience with a selection of tapas including Tiger Prawns roasted in garlic oil and a bite of chilli, Wild Fish Ceviche & Grilled Spanish Octopus with rouille emulsion and charred fennel.

Moving on to mains, you’ll find a range of signature paellas on offer. Choose between traditional rice paellas with potatoes, pork sausages, fish and Japanese baby shrimp, or a Paella Valenciana with rosemary, green beans, chicken and saffron; or opt got a more innovative creation with the NZ Langoustine Noodle Paella flavoured with crab stew, smoked paprika oil and Romesco aioli sauce.

When it comes to other mains on offer, the fisherman’s stew is bursting with sustainably caught wild fish, prawns, clams, calamari, tomato and fregola sarda or, if you’re feeling extra hungry, opt for the whole roasted suckling pig with orange caramel and sweet and sour sauce.

No matter what you order, it will be light, delicious and authentic; a creation that complements and highlights the natural flavour of each ingredient. All seafood is sourced sustainably and ethically so you can enjoy anything from the crab stew to grilled octopus without feeling guilty.

Save room for dessert and indulge in a plate of Spanish churros with warm chocolate sauce, or share the decadent dark chocolate cake with friends.

Each of the seasonal delights can be paired with a glass or bottle of wine from the extensive list. The selection focuses on Spanish wines with a handful of French and Italian drops scattered throughout.

OLA Cocina del Mar continues to delight and surprise customers daily with its selection of old school Cuban, salsa, flamenco and cha cha cha music playing in the background.
